This is a delicious tomato soup recipe as the basil gives the soup a wonderful pungent flavour!

8 jam or plum tomatoes, peeled and chopped

3 small knobs of butter

2 tablespoons olive oil

1 onion, finely chopped

1 red pepper, chopped

2 cloves garlic, crushed

4 cups of chicken or vegetable stock

¼ cup of tomato paste

Salt and freshly ground pepper

1 teaspoon of sugar
-
¼ cup of fresh basil, chopped

1 cup of small pasta shapes

Freshly torn basil to serve
How to prepare the Basil Tomato Soup

Cut the tomatoes in half lengthways and place face down in a shallow baking dish with the butter.

Roast at 200 deg C for 20 minutes, remove from the oven, turn the tomatoes over and roast for a further 20 minutes.

Meanwhile, heat the olive oil in a large pan and add the garlic, onion and red pepper and gently fry for about 10 minutes or until soft.

Add the roasted tomatoes with juices, the stock, tomato paste, salt and pepper and the sugar. Simmer the soup for 15 minutes.

Remove from the heat and allow to cool slightly.

Pour into a blender and blend until smooth.

Return to the pan and gently heat.

In a separate pan cook the pasta, drain and stir into the basil tomato soup.

Heat to the required temperature, serve in warmed bowls and garnish with the freshly torn basil.

If you do not have fresh basil, use 2 teaspoons of dried basil.
