Chicken and parsley herb casserole
This delicious and wholesome dish is ideal for a cold winter night.
To prepare this you will need:

4 filleted chicken thighs, broken into pieces

4 rashers of back bacon, chopped

2 chopped onions

2 chopped carrots
-
2 sticks finely chopped celery

1 crushed clove of garlic

3 tablespoons freshly chopped parsley

1 tablespoon of freshly picked thyme
-
1 bay leaf
-
125ml hot water
-
250ml milk
-
340g can of sweet corn, drained
-
2 chicken stock cubes
-
Freshly ground salt and black pepper
-
60ml milk
-
2 tablespoons of cornflower
How to put the Chicken and Parsley Casserole together
Place all the ingredients into a large pot apart from 60ml of milk and the corn flour.
Cover and simmer for 45 - 60 minutes. Season.
Combine the milk and the corn flour into a paste and stir into the chicken and parsley casserole and bring back to simmer so that the casserole sauce can thicken.
Remove bay leaf and serve the chicken and parsley casserole with creamy mashed potatoes and green vegetables.
As a variation on a different night, add a handful of chopped pepper dews into the chicken and parsley casserole.
