Making Parsley and Sage Jacket Potatoes Recipe

 

A delicious and quick way to prepare tasty jacket potatoes!

  • 4 large baking potatoes, washed

  • 1 cup grated cheese

  • 3 tablespoons of fresh parsley, finely chopped

  • 2 tablespoon of fresh sage leaves, finely chopped

  • Salt and freshly ground black pepper

Prick the potatoes and bake in their jackets in a hot oven, 200 (deg C) until the potatoes are soft inside when tested with a knife and the skins are crispy.

Remove the potatoes from the oven with a towel. Taking care not to burn yourself, cut the potatoes in half and spoon out the cooked potato into a bowl and put the skins to one side.

Add the cheese, pinch of salt and freshly ground black pepper to taste and using a potato masher or a fork, mash the potatoes and cheese together. You may need to add a dash of milk or knob of butter if the mixture is difficult to combine.

Once combined, add the sage and parsley and mix through with a fork.

Fill the empty potato skins with the parsley and sage potato mixture and bake under a hot grill for 10 minutes or until brown and bubbling on top.

Serve garnished with parsley sprigs or sage leaves.
