Pasta with Parsley and Pecan Nut Pesto

 

This parsley and pecan nut pesto is delicious. Combined with the cream cheese it has a slightly sweet flavour. Served over pasta it makes a delightful meal.

To prepare this you will need:

  • Large bunch of parsley

  • 50g shelled pecan nuts

  • 3 tablespoons freshly grated parmesan cheese

  • 100ml olive oil

  • 4 tablespoons low-fat soft cheese

  • Freshly ground salt and black pepper to taste

  • A few sprigs of parsley and freshly grated parmesan cheese to serve

How to put the Parsley and Pecan Nut Pesto together

Roughly chop the parsley and place in a food processor or a blender with the nuts. Blend until smooth.

With the blender running, add the parmesan cheese to the pesto mixture and then gradually add the olive oil.

Spoon the pesto into a saucepan and mix in the low-fat cheese.

Add salt and pepper to taste.

Heat the sauce taking care not to bubble and then stir the parsley and pecan nut pesto into the pasta of your choice.

Garnish the Parsley and Pecan Nut Pasta with the extra Parmesan and parsley sprigs.

Try serving the parsley and pecan nut pesto on toasted ciabatta or pannini as a light lunch or snack.
