Parsley Potatoes Recipe
This delicious recipe makes an ideal accompaniment to any dish.

5 medium potatoes, peeled and chopped into 4 pieces each

2 tablespoons butter

1 teaspoon of paprika

Salt and freshly ground black pepper

2 tablespoons of fresh parsley, finely chopped
Boil the potatoes until soft inside when tested with a knife.
Place the butter into a baking dish and heat in a hat oven 180 deg C until melted.
Remove from the oven and mix the in paprika, salt and pepper.
Add the potatoes one by one, turning them in the butter mixture to ensure they are coated.
Return the dish to the oven and bake for 20 minutes turning once or twice.
Remove the dish from the oven, sprinkle the parsley over the potatoes and return to the oven for 5 minutes.
Remove the parsley potatoes from the oven and serve, garnish with extra parsley and serve.
