Preparing Smoked Chicken and Parsley

Smoked Chicken and Parsley Soup with Split Peas

  • 2 tablespoons olive oil

  • 2 carrots peeled and chopped

  • 2 leeks chopped

  • 2 celery stalks chopped

  • 1 onion sliced

  • 1 garlic clove, crushed

  • 8-10 cups of chicken stock

  • 500g split peas

  • 4 large smoked chicken breasts, thinly sliced

  • ½ tablespoon Marmite

  • ½ cup freshly chopped parsley

  • 1 teaspoon of soy sauce

  • Freshly ground salt and black pepper

How to put the Smoked Chicken and Parsley Soup together

Heat the oil in a deep pot and add the carrots, leeks, celery and garlic and fry gently for 5 minutes.

Add the chicken stock, split peas, salt and pepper, bring to the boil and simmer until the split peas are soft.

Allow the soup to cool and blend until smooth.

Return the soup to the pot and add the smoked chicken.

Bring to the boil, add the Marmite, parsley and soy sauce.

Add more chicken stock if the smoked chicken and parsley soup needs to be of a thinner consistency.
